Steak and Potato Egg Scramble

This delicious and balanced recipe is perfect for your next brunch. It’s also great for those days when you have leftover steak from dinner. Simply chop up the steak and add it to your eggs for a simple, delicious, and healthy breakfast!


Serves 2

Prep Time: 5 minutes

Cook Time: 15 minutes

  • 4 eggs
  • 6-8 ounces cooked steak
  • 1 small potato
  • 1 Avocado
  • Salt and pepper
  • 1 tsp Garlic powder
  • 1 tsp Rosemary
  • 2 tbsp Avocado oil


  • Heat oil in a pan
  • Add potatoes to pan and season with salt, pepper, garlic powder, and rosemary
  • Cook until potatoes are brown and slightly crispy
  • Cube the cooked steak and add to the pan with the potatoes
  • Cook the steak for 3-4 minutes or until fully warmed up
  • Crack eggs into a bowl and whisk together
  • Pour the eggs into the pan and stir continuously until fully cooked
  • Remove the mixture from the heat and transfer to a plate or bowl
  • Top with sliced avocado
